They are a nutritiously crunchy sweet treat for family and friends alike. There are quite a few ways to bake a healthier dessert and using oatmeal in your baking is ideal. These treats are a great source of fiber. The best news though is that oatmeal is soluble fiber which helps to flush cholesterol from the body which helps aide in the lowering of bad cholesterol. Preheat your oven to 350 degrees. Combine together the following 5 ingredients.
1 cup white sugar 1 cup brown sugar 2 eggs 1 teaspoon vanilla 1 cup margarine Now blend the following dry ingredients in. 2 cups flour 1/2 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon baking soda 2 cups oats 2 cups coconut Optional Ingredients: 1/2 cup chopped walnuts and 1/2 cup raisins. Drop by Teaspoonful Onto a Greased Cookie Sheet
Flatten Each Drop of Dough - Bake for 10 to 12 Minutes
